I was also so glad that I have finally found a really good boxed lo mein noodle to use with this recipe. Heat oil in skillet. Add broccoli and onion and cook for 3 minutes stirring often.
Add a little water and cover the pan. Let broccoli steam until soft. Add ginger and garlic and cook 30 seconds.
Return chicken to the skillet with the broccoli and add noodles and sauce. Stir until heated through. Add olive oil to a very large skillet over high heat.
When the skillet is hot add the chicken and cook until chicken is almost cooked through. Add the garlic ginger carrots and broccoli. Reduce heat to med-high and cook stirring until the broccoli softens and chicken is cooked through.
Cut chicken in bite-size pieces. When all the chicken is cut add it to the skillet. Add mushrooms and broccoli to the skillet.
Cook for five to six minutes or until mushrooms have released their liquid and chicken is cooked through. Add soy sauce vinegar and ketchup. In a medium bowl combine the chicken with 2 teaspoons each of cornstarch water and oil.
In a wok over high heat add 2 tablespoons oil and sear the chicken for a couple minutes until. Add 2 tablespoons of canola oil to a large sauté pan over medium-high heat. Add the chicken and sear for 4 minutes.

If you are not familiar with Lo Mein it is a Chinese noodles dish consisting of usually meat and vegetables.
